Steak Fajitas For 2

Steak Fajitas for 2 with homemade tortilla chips

Stay in tonight, open a bottle of wine (or make some margaritas) and cook up steak for you and your loved one. Pick the fixings that you like on your fajitas. I personally enjoy the works - rice, cheese, sour cream, guac, tomatoes. 








 

Ingredients

Flank Steak 
1 whole pepper (sliced)
1 large onion (or 2 small onions) sliced 
Olive oil 
6-8 flour tortillas (fajita style)
7 flour tortillas for chips (small)
Oil for frying 

Fixings..
Sour cream 
Guac
Diced tomatoes 
Shredded cheese 
Rice or Spanish style rice 


What To Do..

Step 1 - Over medium heat, pour oil into a big enough pot for frying tortilla chips. Fill up a little over 1/4 of the way. Cut your 7 tortillas in half one way and then in half again the other way. 

Step 2 - While the oil is heating up we have to marinate the steak. Drizzle some olive oil and your choice of seasoning or just salt and pepper. Set aside. Put a pan over medium high heat for the steak.
Step 3 - Once oil for the chips are ready add in and cook for a few minutes until golden brown on both sides, flip halfway through. 

Step 4 - Add some olive oil in the pan for the steak. Add in the steak away from you. Flank steak is best cooked medium rare but you can cook to your liking. For medium rare about 3-4 minutes on both sides. Once cooked add steak to a cutting board and let rest. In the same pan the steak was cooked in add in your peppers and onions. It gets to soak up all of the steak juices. let cook on high for about 5-6 minutes, caramelized all they way around and it can be fork tender. 

Step 5 - Gather your fixings, fresh chips, flank steak, peppers and onions all on your table. Enjoy 

Chef's Notes

- Sub out steak for chicken or shrimp. 

- Make a pico de gallo instead of only diced tomatoes.

- Don't make the chips. Go to your local Spanish restaurant and grab a bag.. with salsa. 

- Medium rare is to be at 135° F, 57° C. 
Cook to your desired temperature.
